Is eating beef tendons good for you?

It's not bad for you. They're EXTREMELY high in protein, virtually no fat, etc. It's comprised mainly of collagen (which is the most abundant protein found in the body) and has the gelatin like texture because when slow, wet cooking (like stew) is applied to collagen it's supposed to break down into a gelatin like substance.
